Brighton Beach Breakfast Recipes​

    Chili Cheese Puff
10 eggs
1 tsp baking powder
½ tsp salt
1 pint cottage cheese
¾ pound jack cheese grated (used pepper jack)
½ c melted butter
2 cans (4 oz)chopped green chilis

Mix all ingredients together. Pour into greased 9 x 13. Bake 350 degrees 30 minutes.  

  Breakfast Casserole
1/2 lb Italian sausage, browned and drained
10 eggs, beaten
3 C milk
1 pkg refrigerated shredded hash browns
1 tsp dry mustard
1 pkg chopped frozen spinach, defrosted drained and squeezed dry
¼ tsp salt
1 tsp pepper
1 ½ C cheddar cheese shredded
Heat oven to 350 degrees. Mix all ingredients in
large bowl. Pour into greased 9 x 13 pan. Bake 35 to 45 minutes or until set.

    Butterscotch Cinnamon Rolls
24 frozen Rhodes dinner rolls
1 small box of butterscotch pudding mix (not instant)
1 cup melted butter ¾ cup brown sugar
1 tsp cinnamon ¾ cup walnuts or pecans chopped
The night before, sprinkle nuts in bottom of a greased 9 x 13 pan, place frozen rolls in the pan. Sprinkle butterscotch pudding over then cinnamon, brown sugar and finally drizzle the melted butter. Place pan on lower rack of unheated oven and allow to stand overnight. Do not cover. In the morning turn over oven on to 350 degrees. Do not open door of oven. Bake for 35 to 40 minutes. Allow to cool 5 minutes then turn pan over onto cookie sheet. Allow sauce to drizzle down over rolls.
